Easy Cream Cheese Taco Dip

A delicious, cold, make ahead appetizer that's perfect for any occasion! Try this crowd pleasing chip dip at your next family gathering, party, or potluck. It's not only quick and easy to make with basic ingredients, it's always the first thing to disappear.

Ingredients

  • 8 ounces softened cream cheese
  • 1 cup sour cream
  • tbsp taco seasoning
  • 1+ cups shredded cheese (cheddar, Colby jack, etc.)
  • cold taco toppings such as drained black beans, corn, diced tomatoes, black olives, cilantro, green onion, etc.
  • Tortilla chips for serving

Instructions

  • In a medium size bowl, use a hand mixer to combine the softened cream cheese, sour cream, and taco seasoning. Start with about 1½ tablespoons of seasoning and add more if desired.
  • Spread the mixture onto the bottom of a 7x11 or 9x9 dish. A round pie dish or any shallow dish comparable in size will also work.
  • Evenly sprinkle the mixture with about one cup of shredded cheese and then layer on your taco toppings as desired.
  • Cover and store in the fridge until ready to eat. Serve cold with tortilla chips or Fritos Scoops!

Notes

  • Are you serving a large crowd? You could always double the recipe and place it in a 9x13 dish. You could also serve this dip with a side of guacamole and salsa for variety. They're all delicious with tortilla chips, served cold, and can be made ahead of time so they make for the perfect companions at parties. 
  • Looking for topping ideas? Anything taco related works well including drained and rinsed black beans, corn, diced tomatoes, diced bell pepper, sliced black olives, cilantro, green onions, jalapenos, etc. I recommend serving anything spicy or commonly unliked on the side.
